I had fun experimenting with this recipe. Isaw in a magazine somewhere a cookie that was perched on a mug of hot chocolate. Apparently, there is a special cookie cutter that you can buy to make these, but I did it very easily on my own.

I recently made this simplelittle treat it was so good (so good, that I made it again)! I love that it is dairy free a healthier alternative. Coconut milk is high in fat, but the saturated fat in coconut is quickly turns into energy instead of storing itas fat. Therefore, even though it's high in saturated fat, coconut can aid in weight loss. Coconut milk is quite high in Folate, Iron, Potassium, Vit. C, and many other nutrients as well.Plus, if you have dairy issues, this is a GREAT substitute.
