Its been a long and exciting week. Well a lot exciting and a little bit stressful because of work but my weekend has officially started!

So I have been working hard all week, and I also havent been getting a ton of sleep. So the two together are NOT good combos. When your body is tired and sore, you tend to just not give a crap and head to the greasy burgers and pizza. Trust me, I was tempted But I always keep in mind that eating those types of things while I am trying to work and keep my energy up wont help at all.

Vegetables in brownies!? Am I crazy?! No.. Im not. These were so yummy. Better than the sweet potato brownie recipe. I found this recipe here. From the yummylife.com for Dark Chocolate Zucchini Brownies and was inspired. The ones I made are not dark chocolate and are not frosted and I turned it in to dairy free but they are SO delicious.

Pretty much every italian place now days has an unlimited soup and salad option. Thats usually what I opt for. Pasta doesnt always sit well with me and most other dishes have cheese all over them
I got the Minestrone soup and the house salad with sundried tomato balsamic dressing. I forgot to ask for dressing on the side. They put WAY too much on. My mom has the artichoke and angel hair pasta dish with olives and capers. She really liked it.

Yay for days off! I have to work Thursday and Friday so today I am taking advantage of. I want to do one of my many DIY projects, but I need to pick which one! I am also meeting my mom for a yummy lunch today.

My weekend was pretty lax. Now I have to prepare myself for a hectic week! But first I thought I would share this mornings yummy breakfast.
I make these a lot but I dont think I have formally introduced them. I call it a dairy free fruit parfait because:
1 cup dairy free yogurt
4-5 sliced strawberries
A few pieces of cereal or granola
And any pretty topping you want! (trail mix, sprinkles, choco chips, peanut butter, etc.)
