Food Trekking by the seat of your pants

content discovered on Saturday, June 30, 2012

Most of the time our food treks are highly planned and organised right down to the last detail. Restaurants and chefs are researched and menus are downloaded if they are available. We usually know what we are going to order before we set foot in the door. All the travel plans are nutted out, even the tram numbers, routes and cost of airport transfers are factored into the scheme. Nothing is left to chance. That made me stop and think, what would happen if we did leave everything to chance? It’s an interes... read more »

Apple Cobbler

content discovered on Wednesday, June 27, 2012

This has to be the easiest apple cobbler I’ve ever made! 2 Granny Smith Apples 1 T Tapioca 1 T Lemon Juice 1 t Apple Pie Spice 1 C Graham Cracker Mix 2 T Butter Slice (I like the skins so I don’t peel) the apples. In a soufflé dish combine the Apples, Tapioca, Lemon Juice, and Spice. Cover with tin foil and bake for 30 minutes at 375F. Mix the Graham Cracker Mix (you can use graham crackers and break them into crumbs for the mix) with the butter until crumbly. Place in the refrigerator to kee... read more »

Chipotle Potato Soup

content discovered on Tuesday, June 26, 2012

I'm not usually a fan of soup that comes in a can or premixed because of the sodium content. In fact, this one has 630mg of sodium per cup, which I feel is still too high. A few reasons I do like this particular mix is because: It's made in the USA. It cooks in 15 minutes. Individual portions can be made. It's all natural.I also like this mix for all its applications. Not only am I able to serve this as a hearty soup, just by mixing water, to my family I can also add vegetables and use the mix as a base... read more »

Vegan Queso Dip

content discovered on Tuesday, June 19, 2012

Mock Mozzarella Vegan QuesoThis recipe started out as a Mock Mozzarella by Cindy Demmer. I followed her recipe except for two minor changes. First, I halved the recipe and Second, I used flax seed instead of whole wheat flour.I'm not really sure I can agree with her assessment of this cheesy spread being a "mozzarella". It really is good except DH and I kept comparing it to mozzarella cheese and we couldn't get past what we were thinking it was supposed to be. To us, mozzarella cheese is white, thick,... read more »

Summer Jelly

content discovered on Friday, June 15, 2012

Ingrediente Agriș Zmeură Agar agar Mentă [...] read more »

Anytime Tea Cake

content discovered on Wednesday, June 13, 2012

I'm so happy to be able to share this newest recipe with you today. I'm happy because whenever I start changing ingredients to fit my dietary needs, it's anyone's guess whether it will turn out or be one of those mad scientist experiments. I, like I'm sure you, have revisited the kitchen counter many times to try again.I've learned to keep the original recipe in tact, take notes of what was changed, the date, and any comments as to how it turned out and thoughts of what to try next time. Anytime Tea Cake... read more »

Michael Angelo's Garden Vegetable Stacker

content discovered on Tuesday, June 12, 2012

When DH isn't making his signature pizza or famous nachos, he's whipping up one of these Garden Vegetable Stackers by Michael Angelo's. We've been able to find these in the refrigerated section at our local Costco for the past few months.A couple nice things about this ready-to-eat meal are the fact that they are refrigerated, cook in 8 minutes, no preservatives, and serve up nicely as a main course or an addition to pasta.A few cautions that must be mentioned that really make this dish a bummer are the ... read more »
